Gingerbread Cake


 

George Washington’s mother loved to make his favorite snack, gingerbread cake. Here’s a modern day version of the treat the first U.S. President loved.

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup molasses
  • 3/4 cup hot water
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1/4 teaspoons ground cloves
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Directions:

  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, using mixer, cream butter and sugar until light and fluffy.
  3. Add eggs and beat on low for 2 minutes.
  4. Stir in molasses and hot water.
  5. Combine flour, ginger, cloves, baking soda, cinnamon, nutmeg and salt.
  6. Gradually add to creamed mixture.
  7. Beat just until combined.
  8. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.
  9. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean.
