Quick and Easy (Gluten Free) Peanut Butter Cookies

This soft, chewy, very “peanutbuttery” cookie really is quick, easy, and delicious, and it’s gluten free!
Ingredients:
- 1 cup peanut butter
- 1 cup white sugar
- 1 egg
- 1 teaspoon baking soda
Directions:
- Preheat oven to 325 degrees F.
- In a medium bowl, mix the peanut butter, sugar, egg, and baking soda together until well blended. Cover dough and refrigerate for one hour.
- Roll dough into 1 inch balls, and place on ungreased cookie sheets. Flatten with a fork dipped in sugar.
- Bake 6 to 8 minutes until browning. Cool on cookie sheet for at least five minutes.
