Preheat oven to 350 degrees.
- 1 C zucchini
- 1 C yellow squash
- 3 C spinach
- 3 ½ C alfredo sauce
- 3 C mozzarella cheese
- 16 oz ricotta cheese
- 1 egg
- 2 tsp oregano
- 2 tsp garlic, minced
- 1 box ready to bake lasagna noodles
- Sauté zucchini, yellow squash and 1 tsp minced garlic. Set aside. Sauté spinach and 1 tsp minced garlic. Drain excess water and set aside.
- Mix together ricotta cheese, egg and oregano. Set aside.
- In a 13x9 baking dish, spoon enough alfredo sauce to lightly coat the bottom of the baking dish. Place 3 noodles. Layer sautéed zucchini and squash, 1 C alfredo sauce and 1 C mozzarella cheese over noodles. Place 3 noodles. Layer the ricotta cheese mixture over noodles. Place 3 noodles. Layer sautéed spinach, 1 C alfredo sauce and 1 C mozzarella cheese over noodles. Place 3 noodles. Top with remaining alfredo sauce and mozzarella cheese. Bake according to directions on the lasagna noodles.
