Sweet Potato Casserole


 

Preheat oven to 350 degrees.

Ingredients:

  • 2 ½ pounds sweet potatoes, peeled and chopped
  • 1 cup buttermilk
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs

Topping:

  • 1 cup packed brown sugar
  • 1 cup chopped pecans
  • ½ cup self-rising flour
  • ¼ cup melted butter

Directions:

  1. To prepare potatoes, place potatoes in a dutch oven or 2 quart pot and cover with water. Bring to a boil. Reduce heat, and simmer 20 minutes or until very tender. Drain; cool slightly. Place potatoes in a large bowl. Add buttermilk, sugar, and vanilla. Beat with a mixer at medium-low speed until smooth. Add eggs; beat well. Spoon mixture into a greased 13 x 9-inch baking dish.
  2. To prepare topping, combine brown sugar, nuts, flour, and ¼ cup of the melted butter, and stir together with a fork until well mixed. Spread the topping over the sweet potatoes and bake 375 degrees for 20-30 minutes, or until topping is golden brown.
