Sweet Potato Crunch


 

Preheat oven to 400 degrees

Filling

Ingredients:

  • 2 ½ lbs cooked sweet potatoes
  • 2 eggs well beaten
  • Dash of cinnamon
  • 2 tablespoons cornstarch
  • 1 cup milk
  • ¾ cup sugar
  • 1/3 cup and 2 tablespoons margarine

Directions:

  1. Mash potatoes and mix with other ingredients. 
  2. Bake at 400° for 15-20 minutes.

Topping

Ingredients:

  • 1 cup crushed corn flakes
  • ½ cup brown sugar
  • 1 cup flaked coconut
  • ¾ cup butter, softened or melted
  • ½ cup chopped nuts (pecans or walnuts)

Directions:

  1. Mix and crumble over top of potatoes. 
  2. Return to oven and bake 15-20 minutes more.

Prep Time: 30 Minutes

Cook Time: 40 Minutes
